Proof is proof and the seller could have got significantly more for them if they were indeed proof and would have emphasized that significant detail. If he said that they were Gem/Brilliant/Uncirculated and similar terminology, he was merely using adjective terms suggesting that they were uncirculated (MS 60) or higher without assigning a numerical grade. To better help you with such coins, you really need to work on your photo skills. I suggest placing the coins on a blank white sheet of paper and photographing subject coins in natural daylight without the use of artificial light or flash.
