To get an idea of what you have (if it were me), I'd try to identify (ID) the notes using this site or the BNM (Bank Note Museum). Start with Germany. Most of them have the date on them. ID a few & then write down their P# (for future reference). Once you get comfortable going through a few, then you may wish to organize them (Country & P (Krause) reference number).
Another thing you may want to do is get an idea about how banknotes are graded (so when you take them in to a shop you will have a better idea of the terms). Check out this thread or the PMG grading scales to get familiar with the terms. The better condition (higher the grade) the better the return (money paid for your note).
Last, but not least, if you haven't already done so, get the notes in proper mylar currency sleeves & keep them in a dry place once you've organized them. In fact, this is probably the firs thing you should do before handling them (& when handling them try to do it in a careful/gentle manner if they're in good shape). Good luck!
